This bar of Cru Sauvage chocolate is made of wild, noble cacao from the province of Beni, Bolvia.
The rich, harmonious cacao flavour is complemented by the aromas expressing the freshness of lemon and the fruitiness of grapefruit. The traditional, gentle processing method (60 hours conching) exquisitely unfolds the prune bouquet and vanilla note. About the Maker:
Ludwig Ratzinger was born in Bavaria, Germany, where he grew up in a family owned bakery business. After
apprenticing in pastry in Garmisch-Partenkirchen Business School, then a bakery in Landsberg, he came
to Canada in 1990. He worked at the Chateau Laurier from 1991-1999, the Governor General’s residence
in 2000, and ran a catering business and taught cooking and baking throughout the region, before
